Those Tuna burgers at the Chicago Eggfest

I want to cook a tuna burger like the one Dirk's Fish house made at the Chicago Steak and Egg fest...Does anyone have a good recipe?

Missed the party, so can not compare. Here is a good one.
Tuna, Burgers, W/Mango Mojo
INGREDIENTS:
3 Tbs lime juice
1 Tbs lime zest
1 small onion, finely chopped
2 cloves garlic, finely chopped
2 Tbs rice vinegar (cider vinegar can also be used)
1 mango, chopped
3 Tbs olive oil
1/2 tsp TABASCO® brand Habanero Sauce
2 lbs sushi-grade tuna
1 bunch scallions, finely chopped
1 large egg, lightly beaten
1/2 cup bread crumbs
2 Tbs vegetable oil
6 seeded hamburger rolls
Procedure:
1 In a small saucepan, combine lime juice, zest, onion, garlic, vinegar, mango, olive oil, and TABASCO® Habanero Sauce over medium heat. Bring mixture to a simmer and let cook for 10 minutes. Remove from the heat, season with salt and pepper, and let cool.
2 Cut tuna into 1/4-inch pieces and place in a medium sized bowl. Add the scallions, egg, and breadcrumbs. Season with salt and pepper and mix well. Form into 6 patties and brush them with the oil.
3 Grill on foil or broil burgers 2-4 minutes per side or until cooked to desired doneness. Serve on rolls with mango mojo on top.

Those were terrific weren't they? When I asked about the process the fellow just laughed and said it's a secret recipe and process, and then said seriously it really is! The texture told me it was highly processed (ground), but the sea weed on top had to kick it over the top! BTW when I saw KickapooBBQ are you by chance from down in Central Illinois? I'm over here in nearby Dunlap.Re-gasketing the USA one yard at a time

Joe - I didn't know your moniker! Nice to have met you. Hopefully we'll meet again next June at H & P, and then again for the reunion trip to Carmichael's.Re-gasketing the USA one yard at a time -
I talked to them and they said they ground up sushi grade tuna, and a little waloo (butter fish), some panko crumbs and egg for a binder and some hot sauce. I know if you call them or email they would give you the recipe. They were very nice and they cooked non-stop all day Saturday.
