Had this loin in the fridge for a few days, slow smoke with sugar maple and added a few sausage links.

Threw on a couple shrooms. Pulled the sausages off, sliced up, put in a pan with Bigun's sauce and covered. All those flavors mixed very well.

Fidel, if you read this. I'll put this sausage up with Jack Stack any day.
