Was wondering where you were! Glad to see your still functioning!! Carefull with the Tony's. Its a seasoning. Not a rub. Can get it to saltie quick. Love the glass. Rain stoped and temp dropping yet? Past bed time. Watch out for the Vogons for me tonight. ;)

bill, both meals-pictures are inspiring. Obviously, you are way right on the bell curve. The Mini clearly has it's place, and I've enjoyed many meals cooked in the Mini. For the breast meal, looks like you cooked it indirect, what temp, what did you use to block the fire? From the first set of pictures, what was that knife?
  • 350-400 breasts on a round grid sitting on a pie plate.. knife is a cheap $12 stainless made in japan deba thet i got at the local asian market...i do have some real japanese steel e-mail me if you want info and pics

bill, given the Jack situation, I am guessing you didn't make it to 1:47am when the Phillies managed to not strand everyone on base?

Did you stuff those thighs with anything by the way, I am wondering why they are tied up so nice?

  • i have stuffed them with cheese and peppers but not last night,, i debone them and roll them up so all the meat is covered by the skin.. they cook faster and more evenly without the bone and stay very moist being wrapped in skin all the way around + there is crispy skin goodness in every bite B)
