I don't think Kim has ever checked the temp, just used the toothpick test. -RP

When the thermometer comes out clean after you take its temp. Good question!

The thermopen is like a long toothpick. 192F seems to be magic.

At EggtoberFest Kim used my thermapen to check her cake and if I remember correctly she pulled it somewhere between 195 and 200.

I have seen some bread recipes that calls for temp of 200.
