Penne with roasted pepper sauce

Because of dietary restrictions I'm having to get creative with my cooking if I'm going to use the Eggs. Last night I took a large poblano, jalepeno, yellow bell, some shallots, half a head of garlic, olive oil, parmesan cheese, penne, and a lime and made this pasta dish.

I put peppers, shallots, and garlic in the mini.

I roasted them off until they were blackened then put them in a covered bowl to steam the skins loose.

Peeled the skins, cleaned the peppers, and processed with the shallots, garlic, parmesan cheese, lime juice, and olive oil.

Tossed it into the penne and garnished with a little cilantro. This was good, healthy, and Egg cooked.

Absolutely, he has me on the Mediterranean diet which is basically fruits, veggies, fish, and olive oil. Tonight I'm having steamed artichokes with homemade mayonnaise, made with olive oil. -RP

Were you able to try the lamb Kafte I made at eggfest? I made it for the first time a couple of weeks ago. I used the NZ frozen lamb that time and there was no fat in it. I mixed in some olive oil to allow it to stay moist. That is a pretty lean dish.

Good to see something besides pig candy!! :laugh: I feel your pain. Take Zocor and asprin daily and still eat like I'm 15. Really try to be good but it's so hard sometimes. Really hard to find good fish and vag. recipe. Keep up the good work!
