This weekend I'm taking a pot of a terrific baked beans using a recipe I got a year ago from Thirdeye. This will be a neighborhood get together of all ages. I have been specifically asked to bring this again this year as it was a real hit. This year I'd like to add a touch of smoke during the 1 hour cook, but I don't want to drive people away either. Any thoughts on the amount of wood to use? I thought a short blast of smoke for say 10 minutes might be enough surface deposit to flavor the pot once stirred in. That make sense?

    makes sense to me....

    however i would use something like cherry but i use cherry all the time... i would also think twice about putting chunks or chips in while the oven is on there.. i would use some chunks and when the smoke runs a little cleaner put your DO on remove the lid for ahwile and after you have as much as you want put the top back on..

    because i don't like the white smoke :sick:

    Bente has a good suggestion with cherry wood. Apple will be a little stronger and grape vine, which is a little sweeter but very good.

    I tried Thirdeye's Cowboy beans last night. I didn't put in the beer. For seasoning I used dizzy dust. Moderate mesquite wood and cooked low temp 230° dome for two hours with some chicken parts.

    The beans turned out absolutely FANTASTIC. I am going to play around with the seasoning a little but I don't want to stray too far.

    The beans didn't take on too much smoke for my liking.

    I am not too sure of how much smoke flavor passes down through the surface area of the liquid/beans.

    You might want to do a smaller batch and smoke a little and do a second small pot exposed for the full cook.

    Divide the batch in half and put in two cake pans like thirdeye did.

    thanks - but that's not the recipe - it's not even on thirdeye's site. It's one he shared from somewhere called "Keri's Hog-Apple Baked Beans" and it is a tasty delight. It uses Bush's beans, bacon, pulled pork, Blue's Hog products, apple pie filling and a several other items. Clearly not your Mother's baked beans!
