Alder wood planks - Salmon

What is best set up for grille when cooking salmon on alder wood planks. I have a plate setter and plan on putting in upside down and putting planks on the grille.

I put the plank right on the grill(no platsetter)

using the plate setter to protect the plank from direct heat defeats the purpose of using the plank.
i put thin lemon slices between salmon skin and plank makes taking the fish off the plank easy

Planked salmon is an easy cook.....Soak your plank for a couple of hours in water, then use a direct set-up, 350°-375° dome temp. Put the plank on first for 4 or 5 minutes to warm it up, then give it a wipe with an oiled paper towel. Add the fillet (if it has skin, oil the skin...ir it doesn't you can trim a piece of parchment paper to make removal easy)
Watch for the white protein to start coming out, then take an internal temp. I cook until 130° or so internal. You don't want to wait for it to flake or it will be overdone.Happy Trails~thirdeye~Barbecue is not rocket surgery -
