Brined a chicken overnight with onions, garlic, basil, and some red wine vinegar. On the egg beer can style indirect at 250 for 2 hours with some apple wood. Pulled off at 150 ramped the egg up to 400 direct to crisp up the skin a little and put on a zucchini. Pulled at 170. Best chicken I ever had

Nice lookin' bird there! Was there any other liquid in the marinade besides the vinegar? TIA!

Along with the other ingredients listed, the brine consisted of 1 gallon of water and 8 oz of kosher salt....all played together overnight in a stainless steel pot, drained, rinsed, rested in fridge naked, and finally put on the egg with some wild willies rub. The brine recipe is on Thirdeye's web site.
