Blackened Speckled Trout

Blackened some speckled trout this evening. Just butter in a hot CI skillet and plenty of Paul Prudhomme's Blackened Redfish Seasoning. Don't normally blacken specks because they are a tender fish (as compared to redfish) and tend to fall apart in handling but these held together. Had the skillet on the fire box - had to run get a mit to flip the fish

Egglant with EVOO and a no name rub someone gave me a while back.

Some artichokes with just EVOO. The eggplant and artichokes had some cherry smoke on them. Made a little hollandaise to go with the chokes.

They look great Frank. Never blackened a spec before, well never on purpose :( but guess I'll have to make it intentional next time. Guess it tasted as good as it looks which is pretty dang good.

Frank that whole cook looks great. The 'chokes look great. You catch the troutfresh or out of your frezer? I got a large pond full of cat, largemouth and red ear I really need to do some'en with!

It was mightyfine.
Lost all my fish in the freezer after Gustav and haven't made but one trip since then and just caught specs. Need to go catch some more so I can blacken some redfish at Eggtoberfest. My sister told her doctor that was going fishing today that my stock was gone. He dropped off 10 reds a couple hours ago. It's on!! One more trip and I'll have plenty. -
Caught the specs on Friday. Fried some up on Sunday and blackened the rest tonight. I like catfish any way you cook em and blackened catfish are great.

It was my first time. They were good but I don't know if grilling made them any better than steamed. Actually they were better than steamed because I didn't dirty a pot - LOL.
I remember driving by fields of artichokes as far as I could see along the California coast. I betcha there are some California eggers that could give us a few pointers on grillin a choke. -
If there is anything I really want to do, it is to bring Kim and I down there and go fishing with you. We have been doing 6 fests a year, I think we will stop this next year and go fishing with you. Lets talk in Atlanta. -RP
