recipe request-wings w/ jalapenos/strawberry jam

I agree - I was cooking at the Midwest Eggfest and had a chance to sample the strawberry jalapeno wings - very good! I asked about the recipe and here are my notes:
- Grill the wings until nearly done
- prepare a mixture of strawberry preserves and pickled jalapenos. Appeard to use about 10 ounces of strawberry preserves.
- add the juice of 1 lime to the mixture.
- put the mixture in a aluminum foil pan and heat on the egg.
- put wings into pan and braise
- cover aluminum pan with aluminum foil to finish cooking.

Thanks Scott. Those were sort of my notes as well. However, do you think you use the liquid from the jalapenos as well? I am trying to figure out how the sauce was not so thick.
I was also glad to see you said preserves as that is what I bought, but then I was thinking maybe it was jelly instead as I don't remember seeing strawberry clumps in the sauce.
I sure hope some of those great recipes are posted because my memory isn't as great as I thought it was. Next time, pencil and paper. -

2 tablespoons oil
2 jalapenos, cut into rings
1 tablespoon garlic, minced
1/2 cup white wine
3 tablespoons whole-grain mustard
1 cup apricot preserves
Preheat oven to 400 degrees F.
In a small saute pan over medium heat, heat oil. When hot, add jalapenos and saute until caramelized. Add garlic, and before it begins to brown, deglaze with white wine. Next add mustard and apricot preserves and bring to a simmer. Simmer over low heat for 20 minutes and let completely cool
This is a variation using apricots instead. Really good. -
This was the recipe alright. Cooked 10 wings for the two of us. Quick and easy and pulled off the bone tender, just like at the Eggfest.
Next time though I would substitute white wine per the other recipe suggestion for the lime juice, as the rest of the bottle of wine would go good with the wings. Recipe is definitely a keeper. -
Glad you enjoyed the wings. Your notes are correct, and I do use the juice with the jalapenos, and it is strawberry preserves.
