We were planning on going out for Mexican food last night. But after a stressful couple of weeks at work, I left the office early. Went by Costco and got the most beautiful piece of halibut. Marinated it for just a bit in olive oil, garlic, lime juice and Penzey's adobo. Then grilled it up to put in tacos.
But the highlight of the meal was your wifes Raja con Crema. First time I tried it and it was a hit. A definite keeper in the recipe box. Thanks for the inspiration! Better than any restaurant.

Here it is in Beli's own words. I used Queso Fresca and a little sour cream.
Sure my friend. The Poblano Slices & Cream is a very simple and tasty dish:
1) Put Chiles directly on the fire turn the around 'till the skin is darkened
2) Remove and place them inside a plastic zip lock bag for 1/2 hr.
3) Wash in cold water and remove skin
4) Open Chiles seed & devein them
5) Cut in long thin slices
6) Add fried onions, white Cheese squares,sweet corn, cream, S & P.
Can have them either Hot or Cold. ENJOY

I just sauteed them in some EVOO for a bit before adding the poblanos and sweet corn. Next time I'll probably throw in a bit of garlic. Garlic never hurts anything. -

Thanks Beli, I will be making that again. Unfortunately no, we will not be going to Eggtoberfest this year, family obligations. I will be there in spirit though. Have a great time. :P
