I use 2 pints Yoshidas marinade, from Sam's,about 2 inches of ginger root and 2 inches of lemon grass finely chopped,I use a Cuisenart smart stick to chop it,add this to 1 cup hot water,3 tblspn steak rub,1 tblspl ground red chile mixed with the smart stick and mixed with the Yoshidas.Soak meat overnight in this in a gal.ziplock.I use the whiz plan with the coffee can for the used lump @ 150 for 6 to 10 hrs.Using the adjustable rig with 4 grids I swap the top and bottom ovals at 5 hours and start taking some off usually about 6 hours.Good stuff.
