Wow, what a great looking setup!!! Good to see us eggers represented. Your ribs look very good!!! As a KCBS CBJ I have seen lots of rib boxes over the last five years. One thing I have heard from some is they dont like to look at just sauce in the turn in boxes, might try turning two outside ribs on the side to show the meat.

The ones on the left seem to be a tad bit dark and the skin is not as smooth as the ones on the right. Just my guess, but probably 7's and 8's on appearance. Still quite nice. Did you inject them? How did you cook them (direct, indirect or a combination)?
One of my projects (with chicken) is better trimming. I did some at home last weekend and was amazed how much junk I threw away to make them look good and consistent in size and shape. -
appearance was 978988. no injection, just rub and sauce and indirect the whole time. looks like they didn't prefer my rub and sauce combination

are they med or large eggs? will the sams unit hold a large?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

those are the two larges in that photo. the sam's cart can hold the large or medium with a few modifications. i drilled a hole and added a bolt to each leg at the support shelf, see red arrows. i also added a hose clamp on top of the cart handle supports so i could lift up while moving the cart, see black arrows. the 1x6 fence boards spread the load over the steel grid on the shelf and make it more stable

to attach the wood top surface, i removed the plastic caps in the top of each leg, drilled a hole in them, and screwed them to the bottom of the board in the proper locations and simply pushed the caps back in the legs -

Seriously, think how much better you'll be by the time Kettering #2 rolls around. Again, congrats. Looks like your meat was glistening and your boxes were tight!
