OK pros...what's the best sausage to make fatty's? Want to stuff one with some moz cheese, onions, and peppers!!!

That's not a frequent cook for me but I've heard quite a few here recommend the Jimmy Dean pork sage variety.

Use whichever brand sausage you prefer.
I like to use Tennessee Pride myself - but Jimmy Dean or any of the commercial logs will work. -
Couple of years ago I bought every kind of role sausage I could find in my area. Cooked them all side by side with Dizzy Dust. The winner for me was Jummy Dean's. Don't recall if I tried Tennesse Pride, which hasn't shown up around her for awhile. All the big name sausages were fine. One El Cheapo store brand ended up with a coat of sort of plasticey chewey stuff, maybe from pureed gristle in it. So, don't go cheap.
I've also used fresh ground from the store, rolled in plastic overnite to firm it up. That often works well, just a little crumbly. -
Another vote for Jimmy Dean Sage.
But my parents got me some fresh sausage that a local butcher in Franklin, NC had ground. Awesome stuff, just wish I could get it more often.Knoxville, TN

Just about any kind of fresh sausage can be taken out of the casing and made into fatties. I love doing Italian!
You can often buy bulk sausage and make your own fatties that you can kick-up with more sage and things.
The recipe for breakfast sausage, in Dr. BBQ's first book, is outstanding.
I really like to dust the breakfast sausage with maple flavored rub. -
