Any Memphis Style rib experts ?

I've gotten to a point where my St. Louis style ribs are pretty good. I've now turned my attention to trying to get the best results I possibly can with a Memphis style "dry rub" cook. Any recommendations for dry rub (pre packaged) and sauce? I've heard good things about Corky's, but I'm interested to hear what everyone else likes in the way of rub and sauce. Thanks!

    I lived in Collierville, a Memphis suburb, for three years. It's funny, cuz you wil find all kinds of ribs there - wet, dry and "middle", or mopped.

    I like them all, they're just different. I personally am not a Corky's fan, or a Rendezvous fan. My preferences also run to the "middle," a dry rubbed rib that is mopped a few times during the cooking process.

    To replicate, I use 1 part Swamp Venom, 1 part Dizzy Dust and 1 part Turbinado. Then I mop with a mix of Apple Juice, Cider Vinegar, and the above rub.

    You wind up with a glaze on the ribs, but the sauce of your choice can be served on the side. Some of the best examples of the "middle" (my opinion) include Germantown Commissary in Memphis and The Whole Hog in Little Rock, AR. While Hog was started by some boys who were consistent winners at MIM.

    If you want a true "dry" experience, try the rub above with no mop

    The Salt Lick "doesn't suck" for sure...but not exactly Memphis Style Que...only about 20 minutes from my casa. Dang man, you just reminded me how close!
