Please Help My Fish

I am planning on doing some salmon tonight. This will be my first fish cook. Can anyone offer some advice on how to season and cook. I would like to do something simple, then I can go from there on my next cook. I am thinking alder and maybe some apple chips?

  • If you have Dizzy Pig Ragin' River, use that. It has a slight maple flavor that works well with salmon. If you don't, try a light coating of salt, pepper and brown sugar. Not too much sugar. Cook at a low temp, about 250 with your alder and/or apple. Even at that low a temp, it shouldn't take too long. Maybe an hour with the middle still being rare. You can let it go longer to get the doneness you want or remove it and jack up the temp for a quick finishing sear.

    I'm sure others will chime in with straight was to cook it. Hear is a little differant way. Stuffed. Just take a can of crab meat, Seasoned bread crumbs, and EVOO and make a cake. Cut salmon and cook indirect at 300 till the fish starts to weep the white oil and flakes. Pic worth a 1000 words.

  • I'll second the DP Raging River recommendation.
    A good seasoning mix with stuff most folks have on hand:
    Olive on on skin side to keep from sticking.
    Then squeeze a little fresh Lime or Lemon on the other side, spread around with fingers for even coverage. Then some more Olive oil on the non-skin side. Sprinkle with the following:
    Sea Salt, fresh ground Black Pepper, Thyme, Turmeric, & Cumin. I use the above order, proportioned from most to least. Then follow with a heavy dusting of Paprika.
    Just prior to throwing on the grill, give it another squirt of fresh lime.
    I like both planked or straight on the grill, around 350 for maybe 20 minutes.
    OR, with alder wood at 250 for up to 45 minutes.

    I guess I should have asked first, Do you have wild fillets or Atlantic Steaks. Cooking methods would vary a bit for steaks.
