Waldorf -- Extended After Party

We had an interesting day yesterday with four couples, that have nothing more in common than having met at the Waldorf Eggfest and the enjoyment of good food!
Everyone chipped in with some fantastic food that included: grilled lasagna, made with pulled pork, baked beans made with PP, two racks of ribs, pizza, slaw, salmon appetizers and other goodies.
Our host had a quarter keg on tap and we were outside, in a beautiful garden area, around a pool.
Unfortunately not a picture was taken at the event, but here are a couple of our contributions, that I snapped before we left.

It was a great day with a nice bunch of people!

Here is the recipe. It is one of our favorites.
MEXICAN CAKE WITH FLAN
1 box chocolate cake mix
1 cup milk
1 jar cajeta - 310 grams, in flavor you prefer - about 11 ounces
7 eggs - 3 for the cake and 4 for the flan mixture
1 can sweetened condensed milk - about 10 ounces
1 can evaporated milk - 12 ounces
1 tsp vanilla
¾ cup butter
1 ½ cup pecan halves
maraschino cherries for decorating
butter for the cake pan
flour for dusting the cake pan
Using a cake ring mold, liberally coat it with melted butter, then dust the pan until it is well coated.
Next put the cajeta in the bottom of the pan (it helps if you remove the lid and slowly warm in a microwave).
Mix together the cake mix, ¾ cup melted butter, 3 eggs, and 1 cup milk. Mix together well. Pour cake mixture on top of cajeta mixture in pan.
Flan: In a blender: 4 eggs, evaporated milk, sweetened condensed milk, and vanilla. Blend well. Pour this mixture, in a circle, on top of the cake mixture.
Preheat the oven to 350 degrees. Put the cake pan in a larger pan with water in it, half way up the side. Cook until the cake is done - between 1 & 1 ½ hour (test with toothpick). Remove the cake from the waterbath and let cool for at least ½ hour. Then unmold the cake to a platter and sprinkle with crushed pecans and decorate with pecan halves and cherries. -
LOL couldn't wait and googled it! I have one in the oven as I type. I will give yours a try too:) I have a group of "hookers" here for a 4 day workshop and I like to do different neat things for the lunches. and then we do a lobster dinner for the last night and I think this might be our dessert for sat night. This is the one I found:
1 box of your favorite Devils Food Cake Mix
3 eggs, room temperature
1 (14 oz) can sweetened condensed milk
1 (12 oz) can evaporated milk
1 (8 oz) pkg cream cheese, softened
1 teaspoon vanilla
1 can caramel spread
Pecans
DIRECTIONS
CAKE: Preheat oven to 375 degrees. Prepare cake batter according to instructions on package. Do not bake, set aside.
FLAN: In a blender, mix eggs, condensed milk, evaporated milk, cream cheese and vanilla until smooth. Grease the bunt pan very well; pour the chocolate cake batter and on top carefully spoon the flan batter. Don't worry if the surface of the chocolate mix gets disturbed a little bit. Cover with aluminum foil and cook in a water bath for 1 hour to 1 hour and 10 min at 375 F. Check the cake with a knife or bamboo skewer until it comes clean to make sure is cooked.
Remove cake and cool for 30 minutes to 1 hour and then flip it onto your serving dish. Refrigerate the cake overnight so that the flan sets.
TOPPING: Pour caramel spread on top and garnish with desired amounts of pecans and whipped cream.
TIP: Even though the flan is poured on top of the cake batter, it will sink to the bottom of the pan as it cooks. Once you take the cake out of the pan, the flan will be on top. Scrumptious!
INGREDIENTS (yields about 12 slices)
It looks similar but I think yours is going to be richer. A big plus in my book. LOL I like it when they email or call the weeks after a workshop and tell me they gained 5 pounds :evil:
