can't seem to keep temperature at 250

Am using a digi q and had not had a problem in past. Doing a brisket indirect but temp keeps climbing to 300 Have put some water on char to try cool down any ideas would be helpful

Idea #1..do NOT put water on your lump!! (you are using lump right?..you called it 'char')
Idea #2..try closing the damper some on your digi blower..you don't say but if you have the 10 cfm blower and are trying to maintain very low temps..you may just have too much airflow when the blower kicks on and it's bumping you up too fast..also..close down the daisy wheel to barely open..
Idea #3..provide more info in your requests..it's hard to speculate what the problem may be with no idea of what size egg..what temp you are shooting for...whether or not you are using the daisy wheel..etc etc.. -
Thanks for the advice. I have the large and a 10 cfm blower. I have done several cooks and have been able to keep the temp at 250 with no problem. Keep daisy wheel just open and the blower about quarter to a third and never had temp problem before. Blower not turning on that often Its like the fire is just to hot. Seems wierd. I am using lump and did spray a bit of water on the lump to try cool down. Still newbie but sure appreciate the advise. Guess only way I will learn

We've all been there. I found lots of help on the Forum and has saved me many headache's early on. I have to agree that if the temp is getting away from you, you may have to leave just one of the 5 daisy wheel holes open barly to keep the temp down. Even though in the past, it was ok. Might want to make sure both temp. gauges are reading correctly. I had to reset my BGE temp gauge after about 12 cooks as mine was reading wrong and I didn't know any better ! back to the daisy wheel, this may cause the fan to kick on more often, but see if that will cool things down just enough. I know the bigger cfm fans seem to be pretty powerful and can be tricky. Hope this helps you a bit. I am no expert, just telling you what someone told me before ! There is no reason to have the daisy wheel open if you are using a DigiQ. Need to check the damper again, because there is nothing to prevent a natural draft, when the fan is off, if the daisy wheel is open.
I have no idea why it worked before, but the fan should not be coming on at all, if the temp is above the setting. -
Just a thought. How did you start your fire. I allways try to cone the lump in the middle and light it just at the top. That way the fire will burn down slowly as it burns.

Thnaks for all thr ideas. I now have it sablized for the last hour at 250 and seems to be ok. I did use a little water on the lump to cool it down and now fine and digi q doing its thing keeping it at 250. I know one person said never spray lumg with water but it was only thing that seemed to work. If I should watch for any problems because of water use would appreciate what to watch for. In the meantime again thanks to everyone for their help

When you see orange glow on the lump your lump is burning at apx 1,000°. The ceramics around that area are going to be extremely hot.
Add water to that mix and you can get steam which could burn you, you could get thermal shock on the ceramics, the cast iron fire grid is cast iron, possibly crack that. Spraying the water gives it more a chance to steam but still probably not a wise thing to do.
At times the q2 would overshoot temp. I had learned that leaving the fan vent open even 1/2 would allow enough air into the fire box to overshoot low temp cooks.
On my large I have found that if I leave the vent all the way open until the egg gets to about 200° dome the fire builds well. Then I close the fan vent to 1/3 or even a little less the temp will hold fine and there is very little over shoot.
Some folks close the DFMT all the way down. I will set the petals to 1/8" open slider closed when cooking at 250°. 350° 1/8" - 1/4" open. I usually don't open the more than 1/4" on any cook with the q2. I have the Viper fan.
For reference the Stoker fan's have a damper that shuts the air flow when the fan is not running.
