Nice! I took a page from Spring Chicken's book and cooked that same thing on a cast iron griddle I bought from a sports place called Academy here in Texas. It fits inside an LBGE nicely, and will do a fine job with salmon and burgers (sorry, that's all I've done on there so far.)
Did you use any wood to smoke the fish? I haven't tried it yet, because all my smoking woods would overpower the fish. I have to go pick up some cedar or alder one of these days... -
I put 3 small hunks of dry Alder wood on the coals just prior to starting the cook. This is the first time I've cooked Salmon without placing it on a Cedar plank, and I have to say I prefer the Alder flavor over Cedar.
Cooked at about 300 to 325 for about 25 minutes.
I painted on a little Maple Syrup & Dijon Mustard mix for the last 10 minutes or so.
Really great flavor combo. -
Haven't tried adler yet another to do when the wifes away. Very nice looking fish. Enjoy the new camera

You definitely need alder. Its the only thing to use with salmon!

Yep, alder is the wood for salmon. I honestly don't understand using cedar as a cooking wood. Makes me think of the inside of a closet.

Good choice on the wild caught Alaska fish - looks like it might have been sockeye or coho from the size. Yum! -
Looks good. Your post reminds me I need to try slow smoked salmon. I tend to do quicker cooks in summer but falls coming soon.

Sockeye it was, my favorite kind. We have to pay dearly for good Sockeye here, Whole Foods Market is the only store where we can find good quality consistantly.

Ok - the front did not appeal to me, but I was wearing an apron so you really couldn't see the "wild" salmon on a motorcycle.
