Basic meat so I can adjust the recipe depending on results.

Going low-n-slow for tenderness.

Indirect of course.

Time on.

Time off.

Before the cut.

Finished product. Pretty tender. Next time I'll marinade and monitor temp of meat a little. I'm goin' for brisket temps to see if it gets more tender as it cooks. I'll also see if there is a plateau and, if so, how long it lasts.

My wife cooks it that way in a crock pot. I thought it might stay a little moister given the amount of time I planned on cooking it.

Interesting...not sure there is enough fat to provide for a plateau. Keep us up to date on future recipes/attempts.
