can stuffed green peppers be frozen?

I'm fixing stuffed green peppers per Gfw's recipe that I have done many times over the years. I'm thinking of doing a double batch and then freezing them for future tasty/easy noon meals. The recipe calls for parboiling the peppers first and then stuffing with the meat & rice filling and then baking for 20 minutes. My thought is to freeze them after assembly prior to the baking. OTOH I don't know how well peppers freeze. Any ideas?

Peppers freeze fine, however, I do not like to freeze items with rice as it tends to get mushy and breakup when reheated.

Thanks - in this recipe the rice is already mushy as it is cooked along with the meat and other goodies. I think I'll give it a try since I really liked them but wifey says she burnt out of them as a child - yet honest - I had my first stuffed pepper in my early 30's and love them!Re-gasketing the USA one yard at a time

What if you undercooked the rice separately and then mixed with the meat??

I've been using my meatloaf recipe as of late (no rice). If I have any extra meat after stuffing the peppers I roll them into meatballs and pull them prior to the peppers when they're done.LBGE Katy (Houston) TX
