Salmon and salsa

This was really good - cumin/salt/pepper encrusted salmon done direct @ 400 for about 10min, topped with a grilled corn, chile & tomato salsa. Side dish was hollowed zuchinis grilled first then filled with a brown rice / garlic / cilantro / black bean mix, topped with more tomatoes (fresh from the garden - man I love summer!)

- have been traveling a ton in July, not much eggin goin on here... but Marge is now dieting (again), meaning I need to get creative with the veggies and lean meats / fish...sadly my pizza has to go away for a while unless I can figure out a yeastless, whole grain dough that doesn't taste like asbestos :huh:
will start sharing more often...hopefully come up with some good stuff while dropping 20...
