Tonights Cook-Pork Loin w/Raspberry Chipolte sauce

Had a nice pork loin from Sam's tonight. Seared on both sides at 450, then roasted indirect at 350 for about an hour, internal temp to 145 degrees. Sauced in the Raspberry Chipolte from Sam's I got a few weeks ago. Very, very good. Let rest for 15 mins then sliced thin.

Side dish was an idea someone posted here a few days ago, cauliflower casserole. So, I looked up on allrecipe.com and found a dish close and sounded good. Here is a modified version I did tonight.
Cheesy Cauliflower Casserole
"This is my Grandmother's recipe. It is a must for all holiday meals!"I
INGREDIENTS:
4 oz saltine crackers
½ cup butter
1 large head cauliflower,
steamed
1 pint cream
½ cup mayonnaise
½ cup shredded Jack or Colby cheese
½ cup shredded Cheddar
cheese
½ cup sour cream
Salt & Pepper to taste
1 DIRECTIONS:
2 Preheat your oven's broiler.
3 Crumble salted crackers into a small bowl and mash them with butter until soft. Place steamed cauliflower into a 9x13 inch casserole dish.
4 In small saucepan, combine cream, sour cream, and mayonnaise with wire whisk. Bring the mixture to a boil; boil for 1 minute. Remove the pan from the heat and stir in cheese until melted. Pour this sauce over the cauliflower. Crumble the butter and cracker mixture over the cheese and cauliflower.
5 Place the casserole into the preheated oven and broil until golden brown.
Servings: 8
Preparation time: 10 minutes
Cooking time: 5 minutes
Ready in: 15 minutes

Now that's a fine looking pork loin.
Tell me, does the raspberry chipolte have much heat to it? I've been hesitating to buy it, cause we don't really like the hot stuff. -
If it's the Fischer & Weiser (that Sam's sells out West), then not really... sorta sweet with a little tang/nip. My friends who can't do "spicy" love it! Target (Archer Farms) and Whole Foods both carry more sweet than hot versions...

NP! If you do find it's too spicy/hot for ya, just add a little raspberry jam... better yet, fresh raspberries!.. that should cut it!

We made this a few weeks back with the same glaze. I found this recipe and it looked good, but my wife had just bought a bottle of that from Sam's so I used it in place of the glaze in the recipe.

It was delicious with no leftovers.Knoxville, TN
