Took 2 butts out of the freezer yesterday (about 8 pounds each) and don't think they will defrost in time for 9 pm tomorrow start. Still cryo'ed so if no better ideas I might drop then in a cooler with ice and water tomorrow. They are in the bottom of the beer fridge now which is as cold as I can set it without the beer icing. Wife said I cant leave them on the counter overnight because the colors clash :( :P. Any better ideas??

One of the most valuable things I learned from watching Alton Brown on the Food Network: the best way to defrost anything is with running cold water.

I recently picked up a dozen racks of BB ribs from a wholesaler, not expecting them to be frozen solid. I needed them thawed ASAP, so I put them all in a cooler (they were cryovac'd), placed the cooler in our bathtub, and filled it with cold water. Continued to run just enough cold water to keep the water moving - it works like a convection oven, only in reverse. Convection thawing? I dunno... but that pile of ribs was thawed in no time.

Cooler in the bathtub is a good idea. I have used the water in the sink but limits size and I have to drain and refill the water. I hard freeze all my stored foods to minus 11 deg F (kills fish worms and I only keep one freezer)so thawing anything of size is a multi day project in the refrigerator. Cooler and a bathtub, absolute genius. (I do use a cooler on smokehouse hams to rehydrate them). thanks rc
