Ask them what primal did it come from? Hind 1/4 fore 1/4? From the 1/4 it came from where on it? That is loin or round for the hind or rib or chuck for the fore?
Was it in a box from IBP or another bulk supplier. If in a box what does the label say?
A real good picture of the piece before trimming and after trimming might allow me to say what it is.
I worked in the meat business for 30 years so I have some expierence on meat cuts.
This is fun nameing the mystery meat.
