Brownie Advice

I bought a box of brownie mix at Sam's Club. I haven't tried this on the LBGE yet.

Any advice? Has anyone tried using a Pyrex glass pan on the egg?

Box says to cook in a metal or glass pan 325 degress for about 47-49 min. for a 13 x 9 pan.

Definitely would do indirect.

    I have had both good and bad results.

    Remember the dome temp is higher than the grid temp.

    If you are going to use a plate setter, I found it best to put the grid on top then the pyrex. I broke a pyrex when putting it on the setter directly. I am guessing the pyrex was too hot.

  • as the official brownie princess's father on this forum, i can attest that pyrex will work just fine on the egg, and yes, go indirect following the same directions as you would for the oven. .. .just make sure you have a nice clean burning egg. . .you don't want greasy tasting brownies .. .. :woohoo:

    I have only done about 6 cooks on my egg. Can't be that dirty right?

    What the h... after a few glasses of wine no one will notice :laugh:

    In all seriousness how high can I crank it up to to clean it after just 6 cooks and still be safe with the gasket..

  • you gotta put the plate setter in feet up with the grid on top of the feet so that you have air flow between the plate setter and the pyrex. ...you wouldn't put the pyrex on the bottom of your oven either....you have to think of your egg just like your oven sometimes... :ohmy:

  • crank it up to 550 - 600 to clean it without doing gasket damage. ....more important is to let it burn at baking temps (350 degrees) for a good 45 minutes or until there is no smoke coming out of the egg, before putting the brownies on to bake. ..
  • yes, legs up with grid on top. .. you want that airflow under your pan, just like in an oven. ..

    Just to make sure I understand.....

    because I am not real comfortable cranking up to 550ish

    if I let the egg burn at 350 for about 45 min before putting brownies on I will hopefully avoid any "greasy tasting brownies"

    You could use the ceramic feet to support the pyrex dish, allowing for airflow tween it and P.S.
  • yep... i don't "clean" my egg each time i want to have a "clean burning egg". .. i simply make sure i have a 'clean burning fire". .. that is, i light up a load of lump and let it burn at the temp i want (in the case of brownies, 350ish) for about 45 minutes or so, until there is no smoke coming out. ..this means that any sitting grease has burned up .. .yes, there may still be crud laying around the inside of the egg, but it isn't going to affect what's going on because the temps aren't hot enough now to make that stuff cook any more ...

    let me add though, that if you have recently done something like a lot of lo and slos (big old pork butts or briskets and there is a lot of grease in the egg, then, yes, you are going to want to do a good hot burn for a couple of hours to get rid of that accumulated grease, cause at 350 -400 degrees that black smoke is gonna come out of that egg for a good long time. . ..

    Mad Max, what temp would you reccomend for the "burn" to clean an egg? Also, about how often with regular 3-4 times per week usage would a cleaning need to take place?

    No I have only done ribs with a drip pan below and a beer can chicken that were the real only low and slows.

    Some ABT grease might be on the platesetter from last night.

    tonight would be perfect. just do a high burn to clean for a few minutes after the pork and then let cool slightly and toss on your brownies. nice bed time snack :)

    i tried making hash brownies the other day, but i think i did something wrong. maybe the corned beef was off... and he potatoes in the hash didn't really help either.

  • there is no set number of cooks between cleanings. ..sometimes i go months. .. but i usually open up the vents any time after a lo and slo (like a pork butt or a brisket, and just let the rest of the load of lump burn out at 500 - 600 degrees till its done. ...leave the plate setter in, also throw the daisy wheel in as well. ..that takes care of everything. ..when the egg burns itself out, sweep all the ash out. ...i'm left with a clean daisy wheel, plate setter, firebox, the works ....just sweep out the ash. ... waalla .. ..
