Attack of the Zuccinis

We have survived the first few attacks in good shape but we are weakening fast. Reinforcements requested.
We dispatched these in last night with the help of some baked potatoes.

    only thing we DIDN't plant this year.

    looks good.

    got summer squash and eggplant coming in like gangbusters. kids want to make ratatouille. i shooda planted zukes too.

    Recently, a friend went to a mall and left the convertible top down while shopping. Upon returning, she was shocked to find the car overfilled with an abundance of ripened zucchinis. I guess some folks will share their crop anywhere!! 8 - )
  • We are under attack here in Ohio too. I was able to capture 4 out of the garden where I promptly dredged them in flour and Butt Rub, and fried them on the side burner of my Weber. They were then humanely put away by me and the boys with egged chicken breasts. :P

    Stuffed Zucchini

    Cut 2 Zukes lengthwise
    Scrape out center to ¼” Reserve pulp
    Brown 1 chopped onion & Few cloves chopped Garlic
    Remove from pan.
    Brown 1 lb Hamburg, return onion &Garlic to pan
    add the chopped Zuke pulp and reduce liquid.
    Add 1c Italian style bread crumbs
    ½ to 3/4 c grated romano & Parm cheese
    mix together ad S&P to taste.

    Oil Zukes inside & out, oil baking pan, Stuff Zukes
    Bake in 375-400 egg Maybe 45 min Top of with Mozarella
    And brown.
