Ideas for leftover chicken

Made some sammy's for lunch with smoked chicken, lettuce, provlone, tomato, a touch of dijon mustard, salt, pepper, oregeno, oil & vinegar. Was darn good.

Making chicken-broccoli-garlic pizza for dinner.

What are some other everyday ideas for leftover chicken that you guys use?

    smoked chicken salad is great. add some sliced toasted almonds,onions,mayo, S&P, celery, a tad of dijon must. Let sit in fridge. YUMMY!

    smoked chicken in cream sauce with roasted red pepper served over linguini on a bed of steamed spinach
    this had buckboard bacon in teh sauce as well

    BBQ chicken quesadillas. Cooked chicken, shreaded cheese of choice, scallions, cilantro, jalapenos, etc., with some BBQ sauce if you'd like - between 2 flour tortillas - on your pizza stone.

    Larry's Chicken Cacciatore (Eggfest 2000)
    Description: Grilled chicken breasts smothered in cacciatore sauce and Mexican cheeses
    Ingredients: • 6 chicken breasts, boneless/skinless
    • 1 23 oz jar Ragu Chicken Tonight cacciatore sauce or one you like
    • 1 16 oz pkg Sargento grated Mexican Blend 4 cheeses
    • Yoshida's Gourmet Sauce
    • garlic powder

    Instructions: Spread Yoshida Gourmet Sauce over each chicken breast. Sprinkle each with garlic powder.
    Cook breasts on Egg at 350 degrees, about 7 minutes each side. Remove from Egg and arrange in shallow pan. Cover breasts with cacciatore sauce. Sprinkle with hearty handfuls of grated Mexican cheeses. Place pan on Egg. When the sauce bubbles & the cheeses have melted, remove and serve.

    Notes: Serve with your favorite pasta side dish & Augusta's Favorite Salad (Green Jacket Salad) -see "Sides" in recipe section.

    The wife makes a great squash casserole this time of year. If we have any left over chicken at the time, we add it--simple but really good.

    I cook whole chickens most of the time. After the cook.

    Take the carcus, bones and wings - put in a pot, toss in a couple stalks of celery, 3 or 4 whole onions quartered, and carrots bring to a boil then simmer them for 4 to 5 hours.

    Strain and from there the ideas are endless - fantastic egge'd chicken soup, chicken & dumplings and on and on.

    Oh yes the left over chicken if there is any. Sandwiches, salads, Fantastic fajitas, chicken wraps, chicken tortillas are a few things.

    i like making chicken nachos with the leftovers... but i like making nachos out of anything ;)

    mix it with romaine lettuce and ceasar dressing and put it in a pita for Chicken Ceasar salad wraps.

    Chicken Salad - chicken, mayo, small diced celery, salt & pepper. Doesn't get any simpler.
