I saw the posts today about peach cobbler recipes and it had been a while since I tried one. So I did some chicken thighs coated with Tsunami Spin and some with Shakin' the Tree on others and corn on the cob. I cooked the chicken and corn together indirect at 400 for about an hour. On the small I cooked Rusty Rooster's Peach Cobbler with 3 ingredients...peaches in lite syrup, white cake mix and butter...I added cinnamon & brown sugar...don't, as it really did not add anything oddly enough...I cooked it indirect at 375 for 1 1/2hrs in a 5qt CI DO...here are some pics

    Looks good! What was the setup for the indirect cook with the DO on the Small?

    The 5qt CI Dutch Oven barely fits in the small. The way I set it up is:

    I put a regular grid on the small and then I put a 10" pizza pan as the heat barrier. I put 3 copper T's, which act as feet on the pizza pan and the CI DO on the T's. It just barely fits but it does work. I also turned the CIDO twice during the cook to get even heat distribution. It cooked perfectly.

    This recipe was posted yesterday by Big 'Un and is a recipe from Rusty Rooster.

    2 cans of fruit w/syrup(not pie mix)
    1 box of white cake mix
    1 stick of butter,melted.

    Pour fruit into pan, sprinkle cake mix over fruit, pour butter over cake mix. DO NOT STIR AT ANY TIME! Cook at 375F until golden brown. Enjoy!

    side note: I made a large one yesterday at work, peach on one side, and fresh black berries on the other side. Next time I would add some type of juice to the blackberry side, it was a tad dry, the peach side was fine because the canned peaches are naturally wet. Have some ice cream or whipped cream ready!

    The cobbler recipe is in the 2007 Eggtoberfest cookbook & is relly that easy. Doesn't matter what kind of fruit you use.

    I'm off to the Acme now for the ingredients. I tried a number of arrangements of my bits and pieces in the Small and couldn't find a way to do an indirect cook with the 4Q DO. I'm going to take the easy way out and cook it in the Large with the 12" BGE pizza stone on the Spider and the DO on the porcelain grate at the standard height. (I'll also see what's on sale to cook on the Small for dinner.)

    If you are using a CI DO cook it direct. CI does a great job direct. That is what they are designed to do. Mine have the 1" legs & I set them in fires all the time.

    Direct is easy in the Small. Either of my 4Q CI DO's (a Wagner and a Griswold) is a perfect fit in the GrateMates ring, which puts the bottom of the DO down level with the top of the fire ring. Will the cobbler cook OK at 375º without the bottom burning?

    I bought two nice bone-in loin pork chops for dinner. They're going to look pretty lonesome on the grate in the Large. Maybe I'll put the CI grate from the Small down on the Spider in the Large. Or I could use my 5Q enameled CI DO to cook the cobbler indirect in the Large. I have too many options here.

    Yes, it will cook without burning on the bottom as long as you remember to use canned fruit & not pie filling. The pie filling has lots of sugar in it and it WILL burn.

    Good looking chow Kim, That cobbler recipe has become one of our favorites. With all that sugar you added, I'm bettin' your glucose shot thru the roof. :S :woohoo: How's Ginnie doing? I may need to talk to her about canning some jellies, if I can get my hands on some figs.

    She will be glad to give you her recipe. As a matter of fact she is canning fresh blueberry jelly this week. Our BB bush has finally starting producing berries... :)

    Our friend who has the fig tree says her tree is loaded but they will not be ready for a few more weeks.
