Tequila Lime Mahi Mahi

I'm attempting to eat healty meals and tried this Mahi Mahi, marinated in lime, tequila and brown sugar for four hours.

On the Egg for three minutes per side at a high temperature

Topped it off with a mango, papaya, cilantro, red onion and habanero salsa.

I need to do more of the that healthy eating myself. That looks fantastic.

marinade:
1/4 cup lime juice
1/4 cup orange juice
1/4 cup tequila
1/4 cup brown sugar
mix together and marinate four hours, flippling half way through.
Pat dry, wet with olive oil salt and pepper. I also used very little dizzy dust.
Cook for three minutes per side on a hot grill (450).
Salsa was a mix of papaya, pineapple, red onion, cilantro and habanero. I used very little habanero because of the heat. u could also use jalapeno, but I wanted a different flavor

Looks really good! The marinade time seems long. Did the fish start to "cook" in the lime juice?

yes, indeed it did. The acidity from the citrus did cook it a little, but didn't ruin it. Next time I will cut it back to about two hours.

Thanks for the reply. The reason for my question was that I really like doing cerviche. I wasn't sure if the lack of an oil might prevent the cooking process.

Well, I was in Hawaii a few years ago, fishing for Wahoo (I think it is Ahi in Mexico), the deck hand caught a nice size fish that the teeth on that thing could slice an aluminum can clean. Anyway, what he does with the meat is cube it up, marinate it it lime juice over night in the refrigerator and it comes out cooked the next day. So yes, it will cook. However, I like to make sure my fish is cooked properly.

Looks very good! I have never had grilled mahi mahi will have to do some. If you want to eat healthier try swapping brown rice for the white. I think the brown tastse better.
