Apricot stuffed pork tenderloins last night

I adapted a recipe I found and stuffed two pork tenderloins with dried apricots, pecans, onions, herb stuffing, and apple juice. Rubbed them with EVOO and sprinkled with thyme and cracked black pepper.

I cooked them indirect with the place setter at 400 for about 45 minutes with a few apple wood chips.

They were great. Digital camera died or I would have posted pix. Erik

    That sounds real good. It's been awhile since I've read about apricot stuffed tenderloins, I will gave to try it soon Were the apricots tender after cooking?

    The apricots were very tender. The recipe called for sauteing the onions in butter and adding the apricots, pecans, herb stuffing, and apple juice. They cooked together in the pan before the cook, so it was all very tender. The pecans added a little crunch/texture.
