Lemon thyme chicken

Did some chicken drumsticks, marinated 24 hours then cooked indirect 350 for 75 minutes until 200 internal.


Served up with some garlic bread and sweet corn, pretty good. -RP

A little understatemnt going on here. Lemon thyme drumsticks, corn, and garlic bread? Looks much better than "pretty good". Nice.

Those look really good Randy. Here is a simple recipe I've used over the years thats similar:
Chicken Thyme
I adapted this from a recipe on Epicurious - it's amazing that something SO simple can taste SO good:
- 1 roasting chicken or chicken parts
- 1/8 to 1/4 cup olive oil
- 2 Teaspoons dry thyme
- 2 tsp. garlic powder
Whisk last 3 together & pour/spread over chicken. Bake 350' till done. I don't even measure the ingredients anymore. Sometimes I throw in some Realemon juice.

Not yet. Do I need to sign up this early? I think my bride is ready to make the trip, but these gas prices may influence our final decision. I wish Southwest got a little closer than Birmingham to Atlanta.
I fished with the regional BGE rep and his son today. I thought we were going to cook together in Atlanta but it seems he is going to do a lot tasting and enjoying adult refreshments instead of cooking. :laugh: -

That's because wherever I found the recipe it made me salivate. I search around several forums and find interesting recipes and can't wait to hit the grocery store and get what I need to try them. I'm a food junkie and need variety. -RP

Looking back on my question; is it really as easy as lemon juice and thyme??

Almost,
Juice of 4 lemons
Zest of 1 lemon
2 tsp olive oil
4-6 sprigs of fresh thyme (leaves only)
3 cloves of garlic (peeled & roughly chopped)
1 tsp dry mustard
1/2 tsp cayenne pepper
1/2 tsp salt
