Going to try my first plank cook. Which side meets the plank, flesh or skin?

If I might add:
1) Make sure to soak the planks in water at least 1 hr.....I leave mine 24 hrs.
2) Put plank on grill for 3 min. then turn around
3) Spray Pam or a little oil so fish doesn't stick
4) Add fish and make sure there are no parts sticking out of plank
5) 145 internal..This photo is Mahi Mahi going in....

Two more adders to the advice already mentioned.....
Keep a squirt bottle handy in case the edge of the plank catches.
Don't over cook the fish. Check the internal temp when the white albumin protein starts rising to the surface. I pull mine at 140° or so. If you wait for it to be "flaky" it will be overdone by the time it is served.Happy Trails~thirdeye~Barbecue is not rocket surgery -

Along with the rest of the good ideas, I've cook just a few, direct anywhere from 350 to 450.
