Im smoking two bone in turkey breast tommorow weighing about 7 pounds a piece. They actually say that they have been injected with a solution. Should I brine anyway? Also what do you recommend on temp? I heard anything from 300 to 350 so far and pull off at 160 internal temp. Ive also got some dizzy dust and ragin river coming tonight. Should I rub with that?

    If they've been injected I wouldn't mess with any brining. As for rubs, plain old lemon~pepper is one of my poultry favorites but perhaps someone can suggest a DP variety (if you have some available) that would work well. Good luck!~~ 8 - )

    I agree with Rascal but I never brine. I just did an 8 pounder and followed the oven directions but came out a lot better. DP's Shaken The Tree was great. The time was a little quicker than oven times. Had a really crisp skin & the meat was moist. Pulled at 160 , cant remember but think it took 3 hrs. at 325.

    I would inject with Scotties creole butter, just before cooking. We cooked this one a couple days ago at 325F, indirect with pecan wood, YUMMM...
