Help...Basil Cream Sauce
Desert Filly
Posts: 1,042
last week someone posted Salmon with basil cream sauce. I copied the recipe, but I have a few more questions.
Did you put the basil leaves, garlic cloves, and wine in a food processor and puree them all...then added the cream?

Hi, it was large Marge I think. I did it the other night and it was great! I only had my small 1 cup processor at home, my large one was at the studio. I put to much in and made a mess! LOL But i added the cream when i had it all in the pot. Julie

Yes just tossed it all in and blended till fine. then poured in th epan and added the cream. then i think it was butter and lemon? we had asparagus with the salmon and it was delish on that too. a straw would be fine too :unsure:

here you go::
Salmon, Basil Cream Sauce
Found this in Raichlen's BBQ Bible. Added asparagus and a sweet potato...
1 The sauce:
2 -Puree 20 fresh basil leaves, 1/3 cup white wine (I used a Pinot Gris and drank it over dinner), and 2 cloves garlic.
3 -Xfr puree to a small heavy saucepan and stir in 1c. cream, heat to simmer, reduce by 1/2 , takes about 15 mins.
4 Whisk in 1tbs lemon juice and 2tbs unsalted butter. Remove from heat and cover.
5 The salmon:
6 - Marinated for 15 mins (while making sauce) with 2tbs lemon juice and 2tbs EVOO, salt and pepper. Once sauce was done, grilled 3-4 mins per side.

Not quite the same thing, but here's an option for dessert to go with it. My wife made this last week, and it was really tasty...
Strawberry Galette with Basil Cream, adapted from a recipe in Martha Stewart Living.
Enjoy!
