Finally got a chance to cook a couple of these up. Wish I hadn't waited so long. I think this may be my new favorite steak.

Basically it's searing the steaks at nuclear temps and then finishing them at lower temps. A excellent way to do thicker steaks. I don't tend to do it that way for thinner ones like the Flat Iron.

Yes, the flat iron is a very nice cut of meat. The favor is just plain outstanding. I cooked one for supper tonight, it was 5/8 to 3/4 inch thick. So I cooked at 550 for about 8 to 10 minutes. Neighbor came over and I give him some, he said to let him know the next time I was having them and he would buy them if I cooked them. Indeed, one of my favorite steaks also.
