Back to basics - TRex Prime Ribeyes

Almost fell over when I spotted these at lunch today (at the grocery store, of all places.) Anyhow, while the kids were out swimming with Mom, I was getting the cookers cleaned up from last weekend's damage and got the prime-grade ribeyes seasoned (DP Cowlick on mine, kosher salt/black pepper/Benoit's cajun on the other) and went out to get all the ash out of #1 so that I could do a proper sear on the cast iron grate. Here are the steaks post sear:

There's really nothing like a good steak cooked to TRex's specs. Here is the finished product:


Also threw on some smoked sausages while the cooker was at 400 deg--the boy likes them a lot! Anyway, a perfect ending to the week. Got some ribs and more sausages in the beer...err...lemonade fridge outside waiting to go on sometime this weekend, along with the point from the Memorial Day brisket for some burnt ends. Those were a hit last weekend, and I'm looking forward to doing some more again this weekend!

That's it! This next week I am going to TREX ribeyes. I have avoided doing the TREX method since I got my egg to 'protect the gasket.' Got my AMEX bill today and discovered that I have had my egg for exactly one month. Break-in time is over, but I still have a brisket rubbed with DD awaiting cooking tomorrow.

Very nice Mike! I coming for the small and the limonade dispenser soon. What's your wife's and your work hours?!! Just leave the door unlocked and I'll take it from there! :laugh: Thank were going for a ride tomorrow and let some one else cook. My poor Egg needs a break and so do I. Haven't seen the kitty glasses in a while. What's wrong? Kidds wont share with ya?!!lol
