Pulled pork tacos

I reheated some PP tonight and combined it with onions, cabbage, limes, tomatoes, queso fresco, flour tortillas, and my fish taco sauce.

When I make fish tacos, everything is the same except instead of the PP, I flour and fry cubes of cod fish. The sauce is
1 cup mayo
1/4 cup milk
1/4 cup packed cilantro
2 garlic cloves
1/2 tsp chipoltle powder
1/2 tsp salt
couple grinds of pepper
Blend with a blender or stick blender until smooth and creamy. -RP

That sauce sounds like it would be really nice! Do you think it would work with yogurt or sour cream as a base instead of the mayonnaise?
I'm thinking that I'll be talking with the fish monger sometime this weekend. Thanks for the ideas! -
Sauce sounds good. I love fish tacos but never seem to get the sauce I want. I usually use a creme fraiche based sauce. Never thought to use mayo.

For fish tacos I use 2 chipotle peppers in abodo sauce (the canned kind) and about 3/4 C of mayo. Woerks very well with salmon tacos.
I like your recipe and will give it a try on my next taco jaunt.

Yogurt would give it more of a tang that it really doesn't need. -RP

It worked well, but the problem is we know how the fish tacos taste and the pork just doesn't have as much flavor. -RP

The cilantro is what really works in this one, and the garlic is pretty strong, this sauce really needs cabbage instead of lettuce in the taco. -RP

looks great!!!! we have to have tacos once a week... my son requires it. so i am pretty close to
everytime he says tacos... now instead of chicken i will be able to make them with the pulled pork... quick question tho.. what is queso fresco? happy eggin

For New Years I smoked a mess of meats for a group of folks...many of us from Texas. The few of us fortunate enough to live in Austin for years got accustomed to a little BBQ shack out by the damn at Lake Travis that served BBQ wraps in tortillas. That always made an impression on us. So for New Years we made sure to have plenty of tortillas on hand. The pork mostly ended up in tacos topped by a special slaw recipe of mine (Tyler Florence actually...I can't take credit). It was a hit. So much so that when we were invited to fly down to my buddy's new house in North Dallas for a Super Bowl/House warming party it was requested that I make strictly pork tacos for the party. Big hit!
I too love a good fish taco so if you don't mind I might borrow that sauce of yours and give it a try! -

It's been about 10 years but I believe that was it! I don't know if the BBQ was just that great of if it was becuase we were always coming or going for a good time at the lake that made it all taste so good.
