Dinosaur BBQ Steaks - Very Good

I've been making good use of my new Dinosaur BBQ cookbook, the latest being tonight's top sirloins done with their Mojito Marinade and green chimichurri:

It was all I could do to totter over to the sofa myself, Pat.
I cheated on the chimichurri, using cilantro instead of Italian parsley, which I could not find. It gave it a very "citrusy" flavor that I liked on the steak...it would be really good on fish.
It hurts to think about taking another bite

Their cookbook is great. My wife grew up in Syracuse right near there and her folks got it for us a few years ago. We've been happy with everything we've tried from that book, though it needs to be adapted for the Egg.
Just did a brisket using their rub and sauce, and it came out great. Pics and writeup at http://www.fearlesskitchen.com/2008/05/recipe-smoked-b.html There are a bunch of other Egged recipes up there too.

That's cool fearless. I was just in Syracuse. My daughter got her masters at SU and is working while her husband is working on his phD. We went to Dino BBQ while there and I picked up the book...nice site and good looking brisket cook!

Thanks. The Brisket was quite good. My 1st one on the Egg, and we all really enjoyed it.
The site is mostly my wife's project - I provide the occasional smoked beastie for display.
