Nice, bill! Errr....couldn't quite spot the 'chokes in the dish, though

they were baby chokes so there was not much left of them after trimming, and even less after cooking. will use full sized ones next time.

Are you using bomba rice? I have run out and I can only find it in downtown Toronto, which is a pain to get to. I have heard that arborio is acceptable and, for me, a heck of a lot easier to get.

Yea, I use bomba. If you use arborio or other substitute rice then you need to adjust your liquids down.
Order your bomba online for about $8-9 per kilo at various sites if you can't buy local. -
i use bomba and i think it was tnw site that suggested the goya brand medium rice as a substitute. arborio may get mushy if you are not really careful. the bomba is pricey but considering how much time this takes i use that rather than risk a flop

i turned out very well and looked nice. i cooked the meat on the egg instead of saute and i wanted to keep them out of the stock a bit so they would still have crispy skin.

Took me a sec. to figure out the wings in it. What's in the center? Yellow pepper. Is that aundui sausage? I got to get around to doing one of those!
In a hurry today. Just got up and got to get stuff togeather for cook! :woohoo: -
center is yellow pepper, green bean, baby artichoke hearts and chorizo sausage. it is a 4 beer cook but worth the time. have fun cookin.
