i sear lid down. ..but be careful when you open it up to flip . ..that back flash can be real nasty. ..
-
I didn't think back flash was much of a concern when both the upper and lower vents are mostly open as would be the case when searing. Just a thought.

Down out here. When I sear I use the spider so the food is very close to the lump. My dome temp is usually not all that hot.
I am careful with flashback. Since searing that close to the lump I have never had a problem with flashback.
My vents are usually set about a 400° - 450° dome temp.
I put the meat on when the CI searing surface is just getting white hot.

well, at 800+ even with the jet roaring through the dome top, you can still get a nice ball-o-flame when the additional oxygen enters the gap opening the dome. ..i've still lost plenty of arm hair doing that one. .. .ask the spawn about the time my entire upper body was completely engulfed in a ball of napalm when i wasn't paying attention. .. now THAT was fun ...

Down when searing on the grill/ up when searng on the coals (caveman style) I personally don't think its a big deal eather way for the 1 to 1 1/2 min. you sear. Just my openion.
-
Sounds like it can be a problem at any time......thanks
-
any time you have a lot of built up heat and you introduce a sudden influx of oxygen, you have the potential for backflash. .. .always be aware. ...
-
on that you are absolutely correct. ..for the 90 second high temp sear, it really doesn't matter if you go lid up or down. ...i do think that the "chimney effect" keeps the really high overall temps going though with dome down. ...
-
Lots of cookers have the problem actually especially if they have a vertical column of heat.
Offsets are less likely to get the flashback when opening the cooking chamber, but it can happen.
Hot VOC's + O2 = FLASHBACK.. Unless you have an XL then the firefighters would label that on a Back Draft.. You do not want to see a flashback from an XL... -
Agree Thats one reason I caveman so much as I can get a good high temp sear with lid up and kill temp quicker than searing on grill ,lid down. Temps get much higher lid down. When I grill/sear I'm usually in a rush and trying to maxamize time. Get'er seared and get'er done as quick as I can cause I got to get to work!

i sear dome open

What no pictures???
OK who are you and what did you do with the real Rick??? -

it's kinda tuff to get these shots with the dome closed :silly: -

Rick,
You are right, you just can't get the shot with the lid down.

I sear lid up, but does either way protect or leave the gasket any more protected than the other?
