Cast Iron Grate for my Small

Tonight was the first night I cooked using my new CI grate for the small....

a huge Flat Iron :laugh:

    Great looking Moo you got on the plate there! Is that the new grate Bobby-Q was talking about the other day? I gotta get one of those--I can get some nice grill marks with the stock porcelain grate, but I really prefer to cook on the CI grates.

    Goodlookin meat. Is flat iron typically a tender cut of meat or do you have to cook it rare to keep from drying out. BTW thanks for the rib receipe.

    Yep Mike that is the new CI grate from the Mothership. I was in there for a cooking class last week and they just got them in...I love the grid marks it makes...

    JoJo...no you do not have to cook it rare we just like it that way...it is a relatively new cut of meat and is one of the most tender pieces of meat I have ever eaten...we get them when they are on sale ..they usually are 4>99 a lb around Atlanta...

  • I read up on flat iron steaks before I started cooking them. Now I don't really want anyone to know about the secret of the flat iron. I want them to be 4.99 and me being the only one buying them.
    There are only 2 flat iron steaks on a cow according to the internet information I found. They have never been popular with butchers for that reason. They have the tenderness of a ribeye and the flavor of a sirloin. That is what the description was. I tried them and love them. I heard all sorts of things about slicing them like a brisket etc. But I found that to all be bunk. They are a great steak anyway you slice them. I like mine rare like you. However, I do like my broccoli cooked less, BRIGHT GREEN. Just blanched with a little snap left to it. That is one of my favorite meals Steak and Broc. Although I have been eating a LOT MORE Chicken since I have been cooking on an egg...Best chicken ever.......WHat came first, the chicken or the BIG GREEN EGG? HA......
