We just got our XL and are pumped! My wife has thrown together a delicious pizza and we're waiting for the temperature to rise to 500. How much lump do you guys put on? do you cover the whole bottom? Just about a 12 inch radius stacked a little? I'm starting to get nervous i haven't put enough and dont want it to run out....

Go ahead and add some more. You can always damper it down. The first few cooks I did, I had trouble getting temps to level off at 450 or above. I would say at least cover the holes arount the box. As I said before you can damper it down if it begins to get too hot. DON'T LET IT GET ANY HOTTER than 500 until you have done several lower cooks. You'll melt your gasket.

My dealer told me two things when I purchased my large, always fill up the lump past the holes and don't cook above 350 degrees for the first three or four cooks, so take Fire's advice and don't let it get above 450 or 500 or your pizza will be stuck inside your egg. The pizza will still cook just fine, I did two last night in the 450 range.Visit my blog, dedicated to my Big Green Egg Recipies at http://www.bigtsbge.blogspot.com You can also follow my posts on FaceBook under the name Keep On Eggin' or the link http://www.facebook.com/#!/pages/Keep-On-Eggin/198049930216241

Put in enough lump to fill it the line between the firebox and firering. It seems like a lot, but when you're done cooking just shut the vents and it goes out. Next time you cook, just re-light what's in there, adding more if you need to.
As for the pizza, I like to cook mine at 450-500. Make sure the lump is burning cleanly - i.e. no white billowy smoke - before putting the pie on. -
I always fill it up to the top of the fire ring.

If I put in this much lump.
Into this empty XL.
It will fill it up to this level.
Should be enough to cook one of these.
At this temp.
For 18 + hours. At which point you should have enough lump left over to do this.
Shut it down after this one hour cook and you will still have enough to do this.
and this.

The first time I cooked in our large egg I seared some steaks. The gasket seems fine. Did I make a mistake?
