Brined thick cut pork chops

I haven't posted in many moons, but I do lurk regularly and appreciate all the great advice and ideas I get.
Tried something this weekend that was great. I picked up a couple of bone-in pork chops for 1/2 price at my local Fresh & Easy market. Had just received a copy of Cooks Illustrated and decided to follow their advice for the best chops and brine them. Put them in a salt/sugar brine for just over an hour. I also through a couple of medium potatoes in the brine (seperate container) as an experiment. Let them sit for an hour and a half. Dried everything off and Dizzy Dusted the pork. Chopped the potatoes and sprinkled with Rendevous seasoning. T-Rexed the chops and after the I dropped the temp, put the potatoes on for 20 minutes or so. Pulled the chops at 135 and let rest for 10 minutes. Hubby said they were the BEST he had ever eaten, and he is pretty picky and a great cook himself! Cooked just right for our taste, medium and so moist. Potatoes were out of this world, very tender..
