breakfast ideas

Just looking for any quick and easy breakfast ideas for the egg. I don't see many recipes out there. ANY SUGGESTIONS?

Sausage, Hungry Man Breakfast
Ingredients :
1 Pkg. Bulk Sausage
1 12 Ozs Pkg. Bacon (chopped)
1 Medium Onion (chopped)
1 Pkg. Shredded Potatoes
1 Pkg. Shredded Cheddar Cheese
12 Eggs (scrambled)
Preparation :
1 Prepare Egg for indirect cook at 350 degs.
2 In a large dutch oven render sausage and bacon. When bacon and sausage are
3 fully cooked drain some of the excess grease. Add onion. Cook till onion
4 is translucent.
5 Add potatoes. Cook till slightly brown.
6 Pour scrambled Eggs on top of mixture and cover with cheddar cheese.
7 Cover Dutch Oven and cook till eggs are firm and cheese melted.
8 Serve with hot buttered biscuits.

You could do a breakfast pizza.
A few fatties then grind them up and make biscuits and gravy.
There is a recipe for a sausage roll that SSN486(sp) makes that is probably in the recipes.
You can make breakfast burritos like Car Wash Mike did with his burritos earlier this week. -
Here is the sausage recipe. I have eaten it and it is great.

Morning All:Finally got home for the day (after leaving Ocala we also had a church group picnic we had to go to this afternoon). Kathy (her new forum name, even though she hasn't posted, is EggHatter) & I had a GREAT time this weekend. Thanks to Tonia and Larry for all they do to coordinate the event, as usual everything was perfectly planned and went off without any major problems.Below will be some pictures of our cooks this weekend and recipes for those that don't have them already.Obviously the first thing we did Saturday morning was the "traditional" Sausage/Cheese Bread Roll. Here are a few pieces just before word got out that it was ready.
1 Lb. Loaf Frozen Bread Dough, Thawed
1 Lb. Breakfast Sausage (Jimmy Dean Sage is our favorite)
12 Oz. Shredded Cheese, (we typically use cheddar, but anything is good)
2 Eggs
1 Roll dough into approx. 12" x 15" rectangle. Cook sausage. Mix cooked sausage, shredded cheese and eggs. Spread mixture on bread dough. Roll dough on the long side with mixture inside like a jelly roll and drop into a greased (Pam spray works also) bundt pan. Let rise in warm area until puffy (about 1 hour).
2 BGE setup is with platesetter (feet down) at about 375°F. dome. Place bundt pan on platesetter and cook until top is golden brown (usually about 35 to 45 minutes). Invert bundt pan onto cutting surface and then brush butter on all sides of bread roll. Slice and enjoy.

Breakfast sausage (cooked)
Scrambled eggs
Onions
Red bell pepper
Tomatoes
Philly cheese
Sour Cream
Kind of a spanish style pizza - lots of other stuff would work like; cilantro, jalapenos, black beans....

Rinse the salt off of a ham steak, throw it on the egg - direct heat - and brush with melted butter and maple syrup. Cook at least until heated through, flipping and basting a couple of times. I like mine with nice sear marks and a little "crustiness..."

Eggtucky's Breakfast Burritos
Serves 4
8 Eggs
1/4 cup milk
2 tbsp John Henry's Pecan Rub
5 tbsp EVOO
1 1/2 tbsp chopped pecan
1 tbsp cracked pepper
1 tsp kosher salt
1/2 cup chopped sausage fatty (leftover)
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1 medium scallion chopped
1 1/2 medium jalapeno chopped
1 1/2 cup shredded sharp cheddar (smoked if you have it)
4 10" Flour or whole wheat Tortillas (room temperature)
4-6 tbsp salsa
Mix milk and eggs and wisk until foaming. Add cracked pepper, salt, and 1 tbsp John Henry's Pecan Rub. Add 1-2 tbsp EVOO to skillet on medium heat. When hot stir in eggs and scramble. Remove eggs to bowl to cool.
On egg (direct) heated to 300-400 add small skillet for sauteeing veggies. Close bottom vent and leave lid open. Heat 1 tbsp EVOO in skillet. Add chopped scallion, chopped jalapeno, chopped red pepper and chopped green pepper to skillet and sautee for 5-10 mins. until tender. Remove mix to a saucer and allow to cool.
Setup egg for indirect at 350-400 dome temp. Add wood for smoke flavor if desired (I used pecan wood). Allow temp to stabilize and smoke to settle and turn blue.
Once all is cooled, mix eggs, pecans, sauteed veggies, sausage, and cheese in a large bowl. Place approx. 1/4 of mix onto a tortilla and fold each end in then roll sides over into a tight roll, hold in place with toothpick. Brush each burrito with EVOO. Sprinkle exterior of each burrito with John Henry Pecan rub. Place on egg for 15-20 mins or until golden brown. Remove, pour salsa over each burrito and serve. Enjoy!.
