stir-fry temp?

Thought I would try that tonight. What temp should I start at? Going to do some chicken and shrimp first, pull that out, then vegs. Does this sound right? THANKS!!

That is why the call it STIR-fry. -
Don't know your setup or eggsperience, make sure you put some EVOO in the wok so the butter won't burn.
I go for a dome temp of 400, then lower the wok right above the lump. So it is much hotter. When I start, I close the bottom vent becasue the dome is open.

Howdy Susan.
Like Rich sez (in his own little way ;-) you want a good hot fire for a stirfry. 500 and up.
I'd start with the chicken first. Cook and remove, then do your veggies and shrimp. Shrimps cook really fast, so your veggies might need more time than the shrimp (not sure what veggies you are cooking)...but you can always start the veggies then a couple minutes before they are done, throw in the shrimp, then the cooked chicken for the last 30 seconds.

a good steak fire is a good wok fire. keep the food moving and multiple small portions are better than wokking one big portion. Hard veggies like carrots and such cut into small pieces for quick cooking.
Two staples at my neighborhood take out place are broths and corn starch. Seems like they are in a lot of my dishes.

I never thought of putting the wok right on the coals, that will be hot! Chicken first,vegs then the shrimp, got it. Thanks!
