pan seared elf with polenta

scallops (any way you want...)

don't use too much liquid, or they'll simmer rather than sear. and try to get dry scallops, not 'enhanced' . the enhanced kind have way to much solution added to sear properly, and they are total cr*p to eat anyway.
pan seared tenderloin, finish -roasted on the grid with smoke.
with a nice bleu cheese sauce. (use pan drippings, softened mushrooms, bleu cheese and a big glomp of mayo, til it melts over low heat).

I like to sear steaks in mine. Season to your liking and then sdd s bit of butter/EVOO or whatever AFTER the pan gets hot. Cook the meat according to its thickness. Towards the end I'll splash in some JD (ALWAYS from an open cup and NEVER from a bottle!) and then igmite it for a grand finale! Enjoy!!

Has anyone done cornbread in the pan on the BGE? I love the crust when we did ours in the oven in the past - but the egg would be much more fun.

My first post here because I'm so inexperienced that I don't have much to offer. But I do know that an iron skillet in the LBGE is a great way to bake some wonderful bread. Sorry, I don't have pics.

I love cast iron pan seared steak, just wondering if there is any flavour, taste, or other advantage to doing it in the pan vs using a cast iron grate and searing it on it. I am thinking maybe the pan keeps some of the juices in and provides some flavour enhancement from that, but haven't really done enough of it to know. Anyone have any ideas on this?
