I just got in a black bear chop and patties,python meat, and a kobe rib eye for the wife. I'll post picture when they get cooked. Came in from ExoticMeats.com They didn't photograph well wrapped.

man after my own heart.
we have a restaurant near by that carries exotics on the menu. my wife came home one night and dared me to name somehting they did NOT have on the menu that night. alligator, elk, bison, roo, rattlesnake...
they had it all. and i had to give the kids a bath while she went out with her friends. my wife loves that stuff too, but she said the crowd she was with was all about the "chicken parm".
sad sad sad.

I grew up in Montana and ate bear as a kid. I remember it as being good. I could not swear to it, but if memory serves, bear is known to carry trichinosis, same as pigs, so I would take it to at least 140 when you cook it.
I decided to google it and found a link that confirmed my memory. The resipes that I saw were all for things where you would cook the fool out of it (stew, meatloaf, etc).
