Just a dizzy Chicken.

Sometimes we got so caught up in making wonderful yummy foods that the simple things fall by the wayside. We did Spatchcock chicken last night. covered it heavy with dizzy dust and cooked about 45-50 minutes direct. the legs came off it when i took it off the small egg.done perfect. I let it rest about 10 minutes while the rest of dinner finished up. It was a natural bird so nothing in there but chicken. slicing the breast was like squeezing a sponge. it was so juicy. I didn't take any pictures it was "just" a chicken. yah, JUST a chicken on the EGG. heaven. Julie

I have yet to do a spatchcock chicken, but I'm getting some poultry shears soon that will let me do it with ease. Here's "just" some chickens with DP Shakin' the Tree on them:

What does spatchcock cutting do for us? -
From what I gather, it makes the chicken such that only the uneaten, bone side of the bird is presented to the lump, allowing higher temperatures to be used, giving a juicier, crunchier skin.

Kinda, only the chicken provides its own barrier.

Cooks a whole chicken in a lot less time, with much better results. Basically, using poultry shears, you cut out the keel (back bone) and flatten the bird out. That is it in a nut shell. The one I did last night was pretty black on the bottom but done just right on the inside. it also was done in just under an hour. We just had sandwiches with the left overs for lunch and it was great. I had tossed in 3-4 apple chunks when I put on the bird last night and today there was just a hint of smoke. it was great.

Like the others said, it gives you a very moist chicken in about an hour. Use a raised grid, per TNW recommendations for best results. I now prefer this method over the beer can method. My kids love it. That is a big deal as picky as they are!
