I was a chili's manager for two years. Unfortunately, most everything is generic...so it is hard for the cooks to screw up. The ribs are covered in "Chili's Rib Spice" then put in a pressure cooker that has a small wood chip cup for mesquite. They are then individually wrapped. When they are ordered, they are warmed up on the grill and slopped with what was Cattlemans bbq sauce.

Brother in law works in the food service industry. Manager for one of the cafeteria places. He received a shipment from one of his suppliers. They inadvertantly sent him a case of the Chili's Rib rub by mistake. He opened the case before he relized what it was. Needless to say the supplier couldn't take back an open case so he said to keep it. He gave me a few bags of the stuff. I think I might have a bag or two left. If you would like a bag send me an e-mail with your address. When I get home this weekend I'll send it to you.

I read that recipe..and I'm sure they're good..but unless I read it wrong..it has the ribs wrapped in foil most of the cook...no smoke flavor?...also how do you develop any bark on the ribs if they are wrapped like that??...must be gettin late but I don't understand..

I agree.......already had decided to remove the foil alltogether. and add a pot with some rosé wine on it.....the rest of the recipe sounds great though...... doesn´t it?
